Wienerbullar i långpanna

 
God morgon! Här kommer det himmelska receptet för dessa vaniljrutor. Även om detta recept också var kalas så var det inte det jag menade i måndags. Det bullreceptet kommer upp en annan dag! Jag har lagt in lite fler steg-för-steg bilder längst ner i inlägget. Perfekt att baka dessa när man ska göra stor sats! Lycka till ♥
 
Deg
150g smör
50g jäst
3 dl mjölk
0,75 dl strösocker
2 ägg
ca 12 dl vetemjöl
1 ägg till pensling
 
Vaniljkräm
3 dl mjölk, 3% fett
1 vaniljstång
3 msk strösocker
4 äggulor
1,5 msk Maizena majsstärkelse
 
Fyllning
100g rumsvarmt smör
2 dl florsocker
 
Glasyr
2 florsocker
1,5 msk vatten
Pärlsocker
 
Börja med vaniljkrämen. Dela din vaniljstång på längden med en vass kniv och skrapa ur fröna. Lägg både skal och frön i en kastrull tillsammans med mjölken. Koka upp. Vispa socker, äggulor och majsstärkelse luftigt med elvisp. Slå över den heta mjölken under vispning.
Häll tillbaka blandningen i kastrullen och värm upp försiktigt under vispning. Så fort vaniljkrämen börjar tjockna, häll snabbt över i en kall skål.
Kyl vaniljkrämen i isbad eller kyl. Rör då och då i såsen så att det inte bildas skinn.
 
Smält smör till degen och tillsätt sedan mjölk. Se till att vätskan är 37 grader. Smula jästen i en bunke och häll sedan över vätskan. Rör tills jästen löst sig. Ha sedan i socker, ägg och det mesta av mjölet. Arbeta till en smidig deg och låt vila i 15 minuter.
Blanda florsocker och rumstempererat smör till fyllningen medans.
 
Dela degen på mitten och kavla ut till två plattor, 30x40 cm. Placera den ena plattan i en bakplåtspappersklädd långpanna och bred på vaniljkrämen. Bred smörfyllningen på den andra plattan och rulla ihop till en rulltårta. Skr i 24 skivor och ställ i rader på degplattan i pannan. Låt jäsa övertäckt i 1 timme.
Sätt ugnen på 200 grader.
 
Pensla bullarna med uppvispat ägg och strö på pärlsocker. Grädda i nedre delen av ugnen i ca 25 minuter. Blanda florsocker och vatten och ringla glasyren över den avsvalnade kakan. Dela sedan i rutor.
